We decided to try good old Aussie Roo steaks the other night. Hmmm. not convinced. I was n't really all that keen on them and I catually surprised myself because I thought I would like it. It was a bit tough and twangy...you know a bit hard to chew. Maybe it's because we had a duff piece of steak but I'm not so sure.

The veggies were gorgeous. Roasted red peppers (capsicum), asparagus & broccolini.

5

I can't quite believe that my first baby is going to be five.

Cake01

So grown up. Making faces like a "fashioned lady" (pouting like a runway model). Singing the songs from High School Musical. And writing words without help from us.

Cake02

So grown up I can't quite believe it's been five years.

I also can't quite believe that I managed to make this for the big day.

butter, sugar + flour - that's all

I've never even contemplated making shortbread before. I always thought it would be too difficult to get it right but after tasting James's (end of the 2nd row) homemade shortbread on Tuesday at work I just had to give it a go.

I got stuck in last night and was very surprised at just how easy it is to make. As the title of the post says, butter, sugar and flour - that's all you need.

Ingredients

125g/4oz butter
55g/2oz caster sugar
180g/6oz plain flour

Method

  1. Heat the oven to 190C/375F/Gas 5.
  2. Beat the butter and the sugar together until pale.
  3. Stir in the flour to get a smooth paste. Turn on to a work surface and gently roll out until the paste is 1cm/½in thick (you really need to work it together with your hands to get the pasty consistency needed).
  4. Cut into any shape you like (mine were little hearts) and sprinkle with a little extra caster sugar. Put on a baking sheet and chill for 20 minutes. Bake in the oven for 15-20 minutes until pale golden. Cool on a wire rack.

Could not be easier. And they taste heavenly, really melty and delicious. Especially with a nice cup of tea.

I'm definitely going to make more before the week is out because I can't stop eating it.
